Freda's Pancake Stack
Serves 2
Ingredients
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup milk (or buttermilk for extra fluffiness)
- 1 egg
- 2 tbsp melted butter (or vegetable oil)
- ½ tsp vanilla extract (optional)
Instructions:
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined (don’t overmix; lumps are okay!).
- Heat a non-stick pan or griddle over medium heat and lightly grease it with butter or oil.
- Pour ¼ cup of batter per pancake onto the pan. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.
- Serve warm with some melted dark chocolate and your favourite Freda's Peanut Butter warmed and drizzled over the stack (we used Cornish Sea Salt Peanut Butter). Pop in sliced banana between the stacks (or your favourite fruit), sprinkle some plain peanuts generously over your amazing creation, and perhaps even a drizzle of maple syrup to really push the boat out!
