Sea Salt Peanut Butter Brownie Mug Cake
Ingredients
1/2 cup oat flour
3.5 tbsp coconut sugar
3 tbsp cacao powder
1/4-1/3 cup milk of choice
1.5 tbsp Freda’s Peanut Butter with Cornish Sea Salt
1 tsp vanilla
25g dark chocolate chips
For the optional filling:
30g dark chocolate, melted
1 tsp Freda’s Peanut Butter with Cornish Sea Salt
Process
- If you want the melt-in-the-middle filling, whisk together the melted dark chocolate and Freda's PB. Pour into ice cube moulds and freeze for a few hours.
- Mix together the dry ingredients for the cake, then pour in the wet ingredients and fold to combine.
- Once fully combined, stir through the dark chocolate chips, then pour into an oven-proof ramekin or mug.

Remove the melt-in-the-middle filling from the moulds and pop into the centre of the cake.
- Microwave until cooked through (60 seconds to 2 minutes, depending on the power of your microwave).
- Enjoy with a scoop of ice cream or yoghurt!
