Sea Salt Peanut Butter Brownie Mug Cake

 


Ingredients

1/2 cup oat flour
3.5 tbsp coconut sugar
3 tbsp cacao powder
1/4-1/3 cup milk of choice
1.5 tbsp Freda’s Peanut Butter with Cornish Sea Salt
1 tsp vanilla
25g dark chocolate chips

For the optional filling:
30g dark chocolate, melted
1 tsp Freda’s Peanut Butter with Cornish Sea Salt

Process

  1. If you want the melt-in-the-middle filling, whisk together the melted dark chocolate and Freda's PB. Pour into ice cube moulds and freeze for a few hours.
  2. Mix together the dry ingredients for the cake, then pour in the wet ingredients and fold to combine.
  3. Once fully combined, stir through the dark chocolate chips, then pour into an oven-proof ramekin or mug.
  4. Remove the melt-in-the-middle filling from the moulds and pop into the centre of the cake.
  5. Microwave until cooked through (60 seconds to 2 minutes, depending on the power of your microwave).
  6. Enjoy with a scoop of ice cream or yoghurt!
